A few of my hobbies are hunting, gardening, camping and fishing. So I had to find ways to put up my bounty. My most famous is my deer jerky. It took me a while to find one that I liked. I hope this will save you a few steps. You can get premixed seasonings from Cabela's or Sportsmans Guide.
If you try it and like it, I would like to hear back from you. If you are into hunting,hiking,camping or fishing, this jerky is great to take along as it does not spoil fast.
Venison Jerky
3- lbs of venison or beef (hind quarter) cut into strips 1/8- 1/4 thick
1/4- cup Soy Sauce
1/2- cup water
1/3- worchestershire sauce
2-tsp Accent
2-tbls spoons liquid hickory smoke
2/3 garlic powder
2/3 onion powder
1-tsp pepper
1-tbls cajun spice (optional)
Marinate meat in sauce for 48 hours
Place on tooth picks and hang in the oven from grate at 175 degrees 4-5 hours a little longer if needed. Don't over cook.
I lay a piece of tin foil on the bottom of the oven to catch spills..I also put a spoon in the oven door just to have it cracked open. The jerky dries better.
